This is our interpretation of what Kiwis know as Hokey Pokey but with a twist . Following a visit to England where we participated in a hard candy confectionery course we got to make what is known as Honeycomb - very similar but includes honey in the recipe . Our interpretation uses a Manuka Honey from a small apiary with hives out in the Marlborough Sounds to make the product a little more mellow than that normally seen here in New Zealand .
Dipped in a generous coating of smooth , 54% Dark Belgian chocolate it is an ideal melt in the mouth treat .
